In an interview with the Radio Times she said: "When I started as a chef 20 years ago, British charcuteries were almost unheard of. Slowly but surely that's changing and one of the forerunners was Deli Farm Charcuterie in Delabole, Cornwall, run by a husband-and-wife team, Martin and Jean Edwards, who had no training or prior knowledge of the industry.

"Of all their products, my favourite was a fabulous traditional coppa – like a very large, less minced-up salami – which was as good as anything I've tasted in Italy. One of my fellow judges, Arthur Potts-Dawson, was so taken with it, he's already put it on his menu. I was also impressed by the way they experiment. They're one of the few charcuteries to do a smoked lamb prosciutto."
